Can't Keep Good Knights Down

Fishing in the Dark

The Knights of Columbus St. Hubert Council #11658, St. Louis Roundtable in Harrison Township hosted their 2nd Lenten fish fry of this Lent on Friday March 3rd. 

As luck would have it, a car hitting a telephone pole left us with no electricity, snow coming down in inches, and dusk approaching.  All in within the first 6 minutes of our fish fry starting.  This is where our Council pulls out all the stops.  The fish fry must go on and all the Knights and workers pulled together and keep the food coming. 

Fish and fries were alternated in the gas fryers and as darkness approached, one of our Brother Knights (Pat Haggerty) went home and returned with a generator for power to the kitchen. Extension cords were put into place, miners’ headlamps were donned, flashlights and phone lights were fired up and the party continued. 

Some of the guests even turned their phone lights on and put cups over their lights to act like table lamps.  It was awesome. 

With all this, we managed to serve over 300 meals.  Talk about not keeping a good Knight down, this was an incredible act of ingenuity to keep our guests fed.  Cars pointed into the hall with their headlights on so the patrons could see what they were eating and for safety. Can’t express enough thanks to all the Knights and workers who pooled their resources to keep the fish fry going.
